Why Go Gutsy?

It takes some serious strength to live a gluten free lifestyle. Willpower to say no to gluten ridden food is part of it. Knowing you will feel awful if you eat it is another aspect. And yes, having the drive to get healthier plays its own role too. For me though, the most daring aspect of a gluten free lifestyle was deciding that it was going to taste delicious. That we were going to be able to eat all our favorites and not feel deprived. It takes guts to say, “Hello world, lock up your wheat and hops because there is a new sheriff in town and she is slinging almond flour!”

I dare to live deliciously even though the meals I prepare are gluten free. I had to prepare myself for a lot of recipes flops. Harden my outer skin when I would spend hours trying to recreate goldfishy crackers for my son, only to have them produce just ten edible crackers. It is being okay with trial and error but not settling for less. I feel like so many gluten free people are left settling. Yes, we live in a time where gluten free products line the shelves and it is a common catch phrase phrase. Thank goodness things are evolving to make life easier for us gluten deniers but that isn’t enough.

We shouldn’t have to eat processed food that is just so-so and three times the price as typical wheat based product. I say NO! Let’s make a truly decadent pie that we can all enjoy. May our breakfasts be full of eggs benedict and warm from the oven muffins. Eat that burger. Slurp that ranch dressing. I want to eradicate the mentality of, “Well, it’s pretty good for gluten free.” We deserve more than that. I do. You do! Let’s get gutsy, get in the kitchen and make gluten free delicious!
